Bailey Clark
What made you choose an apprenticeship and in particular the Apprenticeship in Hospitality Scotland?
The course is shaped around an industry that I am very passionate about. I also prefer to learn on the job than through sitting in a lecture hall.
Where are you now? / What position do you hold:
Guest Service Co-Ordinator at the front office team
How did the apprenticeship help you get here?
Working in the hotel for just shy of 3 years now I have seen how all the major departments work and being a very outgoing chatty guy my best fit was the front office team. The experience of all the departments helped shape me into a confident and knowledgeable receptionist.
What would you say to those thinking of applying this year?
DO IT! If you want to learn from the best in the industry then sign up. You need to learn from the ground up if you want to be a top hospitality manager, working 2 years in the 4 most important departments in the industry is the perfect way of learning on the job. I can honestly say the apprenticeship is the best career decision I’ve ever made.
Something Interesting/Fav chef/Hobby/fav sport/something we don’t know about you(?)
After working in the kitchens I am very passionate about my cooking. Even a simple dish I treat it like I’m cooking for the Michelin inspectors, although my girlfriend would say I make more of a mess than the real Michelin chefs.
Someone you’d love to meet:
I would love to meet Marco Pierre White. To see the man that trained Gordon Ramsay to come out with all his infamous one liners just imagine what chef must be like!
