What made you choose an apprenticeship and in particular the Apprenticeship in Hospitality Scotland?
I was 18 and wanted to make a bold move. I had an interview with managers at Gleneagles and trusted them straight away. After my Apprenticeship induction I knew the more I put into it the more I would get out of it.

Where are you now? / What position do you hold:
I run my own restaurant in Pitlochry, Scotland called Pine View. I am the owner 😊

How did the apprenticeship help you get here?
The apprentice ship gave me the knowledge of the industry. I felt it made me the complete package so I could go off and do something on my own. I am young still, so who knows what the future holds!

What would you say to those thinking of applying this year?
In 5 years I came from scrubbing toilets to running my own business. Nothing is worse than missing an opportunity that could have changed your life. Don’t miss this one. It’s a game changer.

Something Interesting/Fav chef/Hobby/fav sport/something we don’t know about you(?)
I am a keen rugby enthusiast!

Someone you’d love to meet:
Albert Roux!
