Mara Seaweed - Learning Journey

Our AHS Apprentices had a glorious day to forage for fresh seaweed. Guided by the expert skills of the @Mara Seaweed ltd. team Fiona, Clare and Beth the apprentices were able to collect and taste the different types of seaweed harvested by Mara.

Mara harvest multiple seaweed varieties from the cold clear waters around Fife and across Scotland. Our apprentices learned all about how Kombu, Dulse & Furikake seaweed is dried & milled within 24 hours to lock in flavour and nutrition. Tasting the different products our Apprentices were able to see how versatile they were to add umami depth of flavour to meats, seafood and vegetables. 100% natural and organic seaweed is a completely sustainable future food.

Thanks to the Compass team, #David Hay & #Jimmy Docherty for treating us to an amazing “Posh Pot Noodle” using some of the seaweed and #Stevie McLaughlin at Restaurant Andrew Fairlie for taking the time to speak with our aspiring apprentices.

We finished the day with a fabulous lunch at a local restaurant The Ship Inn, Leven great food and service.
